Cultivation
Most of the varieties found in Eastern Gedeb are indigenous heirlooms. They adapt better to the environment and seem to give higher quality yields and coffees with the known and celebrated Yirgacheffe flavours with intense acidity, floral and spicy flavours. Coffee cherries are carefully picked everyday to ensure only the ripe fruits are picked and brought to Gedeb station every single day and are processed separately by their sub-regions as they have different sized. About 10-20 thousand kilograms of cherries arrive each day.

Harvest , Post-Harvest & Processing
Gedeb Station receives cherries from high-altitude farms in all over Gedeb. It possesses about 250 African Drying Beds and the majority is used for Washed Coffee. Gedeb coffee is well-appreciated. For instance This specific lots process were put into fermentation tanks for 96 hours where oxygen was removed and C02 was added into the tank similar to wine-making process.
About Halo Hartume CM
"Hartume" also known as "Halo Hartume" is a district in North-East Gedeb of the Yirgacheffe zone. Carbonic Maceration coffee dominates the processing method in this region due to its high-demand but experimentals are. This coffee is a good example of a combination of stone fruits yet intense florals notes such as jasmine & chamomile. Such complex coffee is rare and is what makes Hartume washed incredible.
